What we are trying to find out is if we enable modern auth, what will happen to Outlook on PC, Macs and phones if they aren't currently using modern auth and before we go and enable MFA? But that process is something we plan on doing over time with users as it's a very non technical staff. We'll be following up by working with them to enable MFA across the board and we want modern auth to be the default so we don't need to deal with app passwords. We are now looking at turning this on for a company with 200+ seats.

But on another test in another org with a few existing Outlook PCs already signed into Office 365, we had did have a single computer that popped up asking to authenticate. In a small test with a small org it seems like it did the trick and got Outlook on all PCs and Macs using modern auth, which is what we wanted for a new setup.
